    Position Summary

    Your job in the department is to . . .

     

    Actively participate in the production of meals, maintain and clean kitchen equipment in a modern correctional facility, supervises inmate workers, maintain Oregon Food Safety standards.

    Assisting with food orders/supplies and rotation/stocking of the same.

     

    Essential Functions/Major Responsibilities

     

    Prepare meals for inmate detainees in the county correctional facility. Also prepare meals for corrections staff, juvenile shelter/detention:

     

    + Work from a prepared menu with specific recipes to prepare Breakfast, Lunch, and Dinner.

    + Prepare meals that meet various special dietary/religious or other needs that vary from the regular prepared menu.

    + Supervise inmate workers in:

    + The preparation of meals including, but not limited to, mixing, baking, grilling, boiling, steaming and other cooking techniques.

    + Serving trays, not only ensuring proper food items being served, but also proper portion sizes, special diet trays, and food quality/presentation.

    + Cleaning the kitchen and kitchen equipment.

    + Maintaining kitchen equipment and kitchen sanitary conditions.

     

    Maintain communication log with Food Service Manager and Cooks to insure uniformity, quality, and continuity.

     

    Maintain kitchen records and transfer kitchen debris to a central location.

    Place orders in absence of Cook/Food Service Manager:

    + May receive orders from vendors.

    + Unpack and rotate stock.

    Typical Qualifications

    Minimum Education Level

     

    High School Diploma / GED

     

    Minimum Experience Level

     

    One year

     

    Specifics: One year of experience in volume cooking in an institution or commercial firm.

     

    Substitution Note: A ny satisfactory combination of experience and training which demonstrates the ability to perform the above-described duties as determined by the County.

     

    Certifications

    Certification(s) required

    Specifics: Ability to acquire food handler certificate from the State of Oregon.

     

    Driver’s License

     

    Oregon Driver's License required

     

    Specifics: Must obtain within 30 days of hire.

    Knowledge of:

    + Materials and methods used in institutional or commercial food preparation.

    + Care and use of kitchen equipment.

    + Radio communications.

    Skill or ability to:

    + Supervise and work with inmate help.

    + Use, clean, and perform general upkeep of kitchen equipment including, but not limited to, stoves, ovens, refrigerators, mixers, steamers, slicers, dishwashers, etc.

    + Creatively use leftovers to satisfy food preparation needs.

    + Attend defensive tactics and CPR Training for support staff.

    + Convey information, ideas, and facts both orally and in writing to supervisors, colleagues, and individuals, inside and outside the county, using language and a format the audience will best understand.

    + Utilize computers and other technology to communicate in written and verbal forms (e.g., word processing, texts, emails, spreadsheets, department-specific software).

    + Effectively relate well with others, including supervisors, colleagues, and individuals inside and outside the county. Exhibit a professional manner in dealing with others and working to maintain constructive working relationships.

    + Take personal responsibility for the quality and timeliness of work. Show up to work on time, and follows instructions, policies, and procedures. Meet productivity standards, deadlines, and work schedules.
