Dietary Manager / Kitchen Manager

Coordinate food production, purchasing and inventory control; oversees safety and sanitation; supervises staff; maintains standards of Joint Commission, Health Department and licensing agencies.
Key Responsibilities:
+ Supervises and manages the Dietary Department ensuring for qualified staff, sanitation, cleanliness, quality of services and toward application of approved procedures
+ Communicates with the Director of Ancillary Services to identify areas of concern and determines appropriate interventions
+ Works with suppliers to ensure the best possible price and terms, and highest quality product.
+ Maintains employees' schedules including a minimum amount of overtime for such unplanned events such as illness or injury or other time off.
+ Develops, administers and monitors departmental budget.
+ Monitors special diets as required by Dietitian and as clinically appropriate (i.e. thickened liquid).
+ Monitors food preparation methods to assure modified diets are prepared according to diet order
+ Develops and prepares policies and procedures pertinent to nutrition care and menu preparation.
+ Conducts monitoring and evaluation programs that comply with established standards of regulatory agencies.
+ Monitors coupon usage and ensures entrees are provided to clients and coupon holders only, uses good judgment regarding exceptions.
+ Adheres to Lakeview's policies and procedures, safety plans and all standards imposed by regulatory organizations.
+ Collaborates with clinical dietitian on patient nutritional care and menu preparation.
+ Other duties as assigned.
Qualifications:
Skill, Knowledge and Abilities:
+ Proven experience in all aspects of food service, including culinary excellence in proprietary setting with an excellent reputation.
+ Must have knowledge of employee relations, ethics, food sanitation, safety, food and labor laws, housekeeping procedures, and accepted food service techniques.
+ Must be familiar with basic principles of nutrition and related menu planning; established patterns for modified diets; preparation of quality food; high standards of quality food service; large scale purchase and preparation of food; basic principles of supervision and cost control.
+ Must be able to read, write and speak English.
+ Ability to work early mornings, evenings and weekends.
+ Must exhibit mental and emotional ability to understand and perform the essential functions.
+ Must be able to work within Dietary team concept toward general and desired results.
Education: Enrolled within 6 months of hire or graduate of a dietetic technician training program approved by the American Dietetic Association
Licensure: Member in good standing of Dietary Managers Association/ANFP or making satisfactory progress toward CDM.
Experience: Two years of food production in an institutional setting; Knowledge of Joint Commission process and licensing regulations. Supervisory experience.
