Responsibilities:
General Purpose
Ensures the nutritional quality and healthfulness of food offerings within the University’s dining services program. Develops and evaluates menus and provides nutrition education. Advises students, faculty, and staff on healthy eating habits. Supports the dining program in aligning with current dietary trends, health guidelines, and sustainability practices. Collaborates with the culinary team and other departments to promote wellness and support students’ dietary needs.
Essential Functions
+ Collaborates with the culinary team to create and review balanced, nutritious, and diverse menus for dining halls, retail food outlets, and catering services.
+ Ensures that all menu items meet dietary guidelines, including options for vegetarian, vegan, gluten-free, and allergy-sensitive diets.
+ Works closely with dining services staff, including chefs, managers, and catering coordinators, to ensure that nutritional standards are met in all dining operations.
+ Conducts nutritional analysis of meals and recipes to ensure established dietary standards, such as calorie counts, macronutrient balance, and micronutrient content, are met.
+ Makes recommendations to improve the nutritional profile of menu items. Oversees the development and dissemination of accurate nutritional information, including allergen labeling and menu transparency, digitally, online, and in dining locations.
+ Provides nutrition education and resources to students, faculty, and staff through workshops, tabling events, cooking demos, informational materials, and one-on-one consultations.
+ Follows HIPAA and FERPA guidelines throughout the nutrition counseling process. Promotes healthy eating behaviors and lifestyle choices across campus.
+ Advises and works with students with special dietary requirements, such as food allergies, medical conditions, or personal dietary preferences.
+ Ensures that the dining program accommodates these needs effectively and safely.
+ Arranges for specially prepared meals, including purchasing prepackaged foods or sourcing special requests when the daily menu offerings do not meet dietary needs.
+ Partners with the safety team and provides training to staff on food preparation and safety methods that preserve or enhance nutritional value.
+ Collaborates with the University’s disability services and health services for proper student registration and medical documentation related to meal plan exemptions and accommodations.
+ Collaborates with the University’s disability services, health services, wellness programs, and student organizations to develop and promote health and wellness initiatives, events, and campaigns.
+ Provides individual tours to current and prospective student groups to familiarize them with our dining locations as needed. Works with appropriate leadership to engage the student population through social media and pop-up events to drive participation.
+ Works with the dining services team to support sustainable food sourcing and promote plant-based menu options that align with nutritional goals and sustainability practices.
+ Ensures that all food handling and preparation processes comply with health and safety regulations, particularly concerning nutrition and special dietary requirements.
+ Oversees FDA National Menu Labeling compliance regarding nutritional signage in on-campus residential and retail locations.
+ Remains apprised of the latest nutrition science, food trends, and dietary guidelines.
+ Researches and recommends new products, ingredients, or practices to enhance the dining program’s offerings.
+ Participates in departmental committees and activities to ensure stakeholder satisfaction with food service.
+ Maintains the integrity of the selective menu system (CBORD) and inventory/ordering system.

Minimum Education & Experience
+ Bachelor’s degree accepted if certified by the Commission on Dietetics Registration for Degrees received before 1/1/2024 and 3 years of experience in nutrition counseling, menu planning, or dietetics within a food service or dining operations role required or
+ Master’s Degree accepted if ACEND certified for degrees received on/after 1/1/2024 and 3 years of experience in nutrition counseling, menu planning, or dietetics within a food service or dining operations role required.
+ Or equivalent combination of education and experience.
+ 1 year of experience in a leadership position preferred.
Knowledge, Skills & Abilities
+ Strong knowledge of nutrition principles, food science, and dietary guidelines required.
+ Excellent communication and interpersonal skills required.
+ Ability to educate and engage a diverse student population required.
+ Ability to collaborate with various departments, including culinary staff, health and wellness teams, and administration required.
+ Strong organizational, time management, and problem-solving abilities required.
+ Knowledge of food allergies, intolerances, and special dietary needs
+ Knowledge of health and safety regulations, as well as knowledge of compliance and policy management related to the food service industry required.
+ Ability to stay current on health trends and scientific research related to nutrition and wellness required.
+ Strong attention to detail required.
+ Ability to work flexible hours, including evenings and weekends, based on operational needs required.
Licenses and Certifications
+ Registered Dietitian or Registered Dietitian Nutritionist required.
+ Serv-Safe certification within 12 months of hire required.
+ AllerTrain certification within 12 months of hire required.
