Position Summary
The University at Buffalo Campus Dining and Shops is looking for a Mashgiach to work in our Kosher dining facilities. This role is required to be approved by the Va’ad Hakashrus of Buffalo (BVK) and will be responsible for oversight of the kosher food preparation and kitchen operations in our facility. This role is responsible for providing oversight of the food preparation and service to ensure strict adherence to kosher dietary laws including verifying the kashrus of all incoming food products and ingredients.
Daily, this role will be responsible for monitoring all of the employees within the facility to ensure they are trained in kosher food handling practices and are following all dietary laws and regulations. This individual works to education and assist our team to ensure our kosher facilities and services are to the Va’ad’s standards and help to educate our employees to ensure the facility’s kosher status is maintained.
Expected House of Work
This is a full-time position that typically works Monday through Friday between 9am-8pm but at times may be needed for special catering events that could occur outside of these times and days. This position requires a minimum of 40-45 hours per week, and additional hours will be expected during peak periods of business and special events.
Essential Functions
• Counsel, monitor and enforce all kosher dietary laws. Strong understanding of kosher law required.
• Must be able to counsel incoming new employees on proper procedures and educate them on kosher standard.
• Must be certified by the Va’ad Hakashrus of Buffalo as a Mashgiach.
• Must have knowledge of food preparation according to kosher law for a full range of entrees, sauces, soups and accompaniments.
• Strong knowledge of Jewish dietary laws (kashrus) and a commitment to maintaining a josher environment.
• Maintains a record of all food items used in the kitchen including their kashrus status.
• Collaborates with Campus Dining and Shops Procurement Director to ensure a steady supply of kosher ingredients and products.
• Responsible for updating order guides and templates for food ordering and sourcing, kashrus certifications, and following of company standards including checklists for opening, closing, and cleaning duties of the operation.
• Ensures all required documentation for kosher certifications is maintained and up to date.
• Responsible for being on site during operating hours and tasks including turning on all burners, ovens, grills, steamers or any other heating equipment used in the Kosher kitchen.
• Experience with cooking processes, e.g., grilling, frying, roasting, broiling, steaming, etc.
• Professional appearance, demeanor, and hygiene required.
• Maintain high sanitary, hygienic, and safety standards and conditions, adhering to HACCP & NYS Dept. of Health guidelines. Includes cleanliness and maintenance of kitchen & equipment
• Demonstrate excellent customer service at all times
• Assist with training new hires and student workers. Uphold all company policies and procedures with student staff.
Work Environment
• The work environment can be loud and busy. There is exposure to kitchen hazards such as hot surfaces and liquids, sharp knives, and slippery falls.
• The position operates in a kitchen environment where the employee is frequently exposed to heat, steam, fire, and noise.
• Exposure to extreme temperatures in coolers and freezers.
Physical and Mental Demands
• The employee must be able to walk through the kitchen for observing the kashrus standards are being met. The employee may sit during service periods in a safely designated area.
• While performing the duties of the job, the employee is regularly required to talk and hear.
• The position requires manual dexterity; auditory and visual skills; and the ability to follow written and oral instructions and procedures.
• Ability to read, write and speak English proficiently.
• The employee must have the ability to use hands to finger, manipulate fingers; and reach with hands and arms, to stir, measure, pour, cut, chop, dice, and decorate, etc.
• The position requires working taste buds, ability to smell, feel with fingers and visually inspect, include close and distance vision.
• The employee must frequently lift and or move up to 10 lbs.
Licensure/Certification
Must be an approved Mashgiach by the Va’ad Hakashrus of Buffalo
Previous experience as a Mashgiach or similar role is preferred, food service experience is also preferred
