    Responsibilities:

    GENERAL PURPOSE

    Conducts regular audits of on-campus and off-campus dining and retail locations to ensure compliance with local safety regulations, Monroe County Health Department standards, and University of Rochester requirements.

     

    Serves as the primary liaison between Campus Dining and regulatory bodies such as the Monroe County Health Board.

     

    Develops comprehensive action plans based on audit findings and regulatory updates, guiding location managers in proactively preventing and effectively addressing health and safety concerns within their facilities. Coordinates with Environmental Health and Safety (EHS) related to pest control and training content alignment.

    ESSENTIAL FUNCTIONS

    + Conducts daily audits of temperature safety logs at all food service locations and provides immediate feedback to managers and supervisors for corrective action. Reviews food storage procedures to ensure compliance with safety standards and delivers prompt guidance on any identified issues. Inspects vendor deliveries to verify appropriate product temperatures and condition upon arrival. Oversees compliance of the Allergen Station, ensuring adherence to program standards, and audits pantry inventories to confirm SKU lists are followed precisely. Compiles and distributes a weekly audit report to leadership, highlighting key findings and areas for improvement.Monitors pest activity and engages Environmental Health and Safety to implement solutions to eliminate and prevent infestations. Performs comprehensive weekly cleanliness audits across all service areas and manages follow-up actions to address deficiencies. Ensures compliance with uniform policies through regular visual audits and immediate feedback.

    + Mentors location managers and supervisors on health and workplace safety protocols, fostering a culture of accountability and compliance. Establishes and reinforces allergen awareness and safety standards across Campus Dining to ensure consistent adherence to best practices. Supports the development of brand-specific programs, ensuring all new initiatives align with established health and safety regulations. Leads efforts to maintain clean, safe, and welcoming food service environments, prioritizing both employee and customer perspectives. Contributes to the design and implementation of a comprehensive audit plan, including clearly defined ownership, scheduling cadence, and corrective action procedures. Assists in the development and oversight of equipment cleaning schedules to maintain sanitation standards and operational efficiency.

    + Conducts daily safety briefings with employees, focusing on rotating topics to ensure ongoing awareness of key safety practices. Delivers tailored food safety courses to associates, ensuring that training meets the specific requirements of their roles. Trains associates on allergen-specific food handling practices and identifies potential areas of risk. Provides immediate on-the-job coaching to associates and supervisors, addressing any food safety concerns or risks that arise during operations.

    + Tracks and documents all dining-related injuries, communicates with appropriate internal partners, and implements corrective actions to prevent future occurrences and improve safety practices. Monitors injury trends and actively works to reduce the number of incidents compared to the previous year. Conducts regular inspections of food service areas, food storage, and customer-accessible equipment to ensure high standards of cleanliness and safety are maintained. Identifies gaps in Personal Protective Equipment (PPE) training and works to ensure appropriate PPE inventory is maintained on-site.

    MINIMUM EDUCATION & EXPERIENCE

    + Associate’s Degree in Food Science, Environmental Health, or a related field, 3 years of restaurant food safety experience including 2 years of which in auditing and/or compliance required.

    + Or equivalent combination of education and experience.

    + Bachelor's Degree in Food Science, Environmental Health, or a related field preferred.

    KNOWLEDGE, SKILLS & ABILITIES

    + Ability to accurately track and maintain audit forms required.

    + Ability to communicate effectively both verbally and in writing required.

    LICENSES AND CERETIFICATIONS

    + Allertrain Proctor Certificate within 12 months of hire required.

    + Servesafe Proctor Certificate and Servesafe Manager Certification within 12 months of hire required.

    + HACCP Certification or ISO Auditing Certificate within 12 months of hire required.
