    Department: Food & Beverage

     

    Reports To: Executive Chef

     

    FLSA Status: Non-Exempt

     

    Starting Rate: $17.25 per hour

     

    License: Work Permit

    SUMMARY: A three-year intensive hands on culinary paid apprenticeship program that develops essential, real world, work skills and provides with a solid classroom education at the same time.

    EXPECTATIONS/OUTCOMES include the following:

    + Exhibits a friendly, helpful and courteous manner when dealing with our guests and fellow associates.

    + Prepare all hot and cold foods according to provided standardized recipes at a high level and thus provide training to those subordinate associates.

    + Assist in monitoring consistency, product inventory, sanitation, scheduling, line checks and food preparation.

    + Advance culinary technique to include but not limited to basic and advanced knife cuts, broiling technique, sauté, roasting, vegetable cookery, soup, sauce and dressing production, deep frying (including standard breading procedure), food handling and garnishing.

    + Ability to work with small, delicate, and sensitive equipment (knives) requiring fine finger dexterity.

    + Advanced food identification to include produce, meat, and fish used in a fine dining operation.

    + Advanced culinary terminology.

    + Able to manage multiple orders at once and completing on a timely basis.

    + Able to present foods in an artistic manner with a high degree of difficulty.

    + Outstanding attention to detail.

    + Able to set up work station completely and monitor others to assure their respective stations are ready for service, produce backup product for the effective execution of the shift.

    + Requires reading and math skill for recipes and measurements

    + Requires the ability to use Microsoft Outlook, Word and Excel, MASS 500,

    + Ability to organize and delegate work assignments/tasks

    + Anticipate guests' needs, respond promptly and acknowledge all guests, however busy and whatever time of day.

    + Prepares, seasons, finishes, and garnishes all food utilizing established recipes and standards.

    + Operate kitchen equipment including slicer, steamer, deep fryer, ovens, broiler, grill, griddles, ranges, salamanders, knives, and other equipment for food preparation.

    + Able to prepare food using KDS touch screen and/or printed ticket while coordinating food orders to support timely and efficient delivery to each table

    + Reviews recipes of food on Menu.

    + Reviews production sheets, assigns preparation and setup to subordinates as needed.

    + Check temperature of all foods and log as to standard.

    + Clean and sanitize all areas of the B.O.H. according to the F&B S.O.P.’s.

    + Anticipate guests' needs, respond promptly and acknowledge all guests, however busy and whatever time of day.

    + Assists in other areas when needed.

    + Assists in training of new associates.

    + Conducts pre shift meetings.

    + Ensures all equipment is in working condition at all times.

    + Sign in on shift report.

    + Other duties as assigned.

     

    SUPERVISORY RESPONSIBILITIES: Assists in supervising 2-8 associates. Conduct Supervisory responsibilities in accordance with the organization’s policies and applicable laws. Responsibilities include training associates; planning, assigning, and directing work; recommends rewarding and disciplining of associates; addressing complaints and resolving problems. Receives telephone calls from associates and fills out proper documentation. Able to use computer to order product through in house inventory system and Microsoft Outlook.

     

    QUALIFICATIONS: To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. The requirements listed below are representative of the knowledge, skill, and/or ability required to successfully complete the essential duties of the position with or without reasonable accommodation. Serve Safe and Safety training is required as part of the training.

     

    EDUCATION and/or EXPERIENCE: High School Diploma Required. Associates degree (A.A.) or equivalent from two-year College or technical school; and 2 years related experience in full service restaurant preferred.

     

    LANGUAGE SKILLS: Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedures manuals. Ability to write routine reports and correspondence. Ability to speak effectively before groups of guests or associates of organization.

     

    MATHEMATICAL SKILLS: Ability to calculate figures and amounts such as discounts, interest, commissions, proportions, percentages, area, circumference and volume. Ability to apply concepts of basic algebra and geometry.

     

    REASONING ABILITY: Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists. Ability to interpret a variety of instructions furnished in written, oral, diagram or schedule form.

     

    PHYSICAL DEMANDS: The physical demands described here are representative of those that must be met by an associate to successfully perform the essential functions of this job with or without reasonable accommodation. While performing the duties of this job, the associate is regularly required to walk and stand for long periods of time. The associate frequently is required to stoop, kneel, crouch, or crawl. The associate is occasionally required to climb or balance. The associate must occasionally lift and/or move up to 50 pounds. Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception and ability to adjust focus.

     

    WORK ENVIRONMENT: The work environment characteristics described here are representative of those an associate encounters while performing the essential functions of this job with or without reasonable accommodation. The position exists in a casino work environment where there is occasional exposure of the associate to extreme heat, load noises, hazards and oil. While performing the duties of this Job, the associate is occasionally exposed to wet and/or humid conditions. The associate is occasionally exposed to moving mechanical parts, toxic or caustic chemicals, extreme heat, and vibration. The position exists in a casino work environment where there is frequent and regular exposure of the associate to noise and cigarette smoke from the casino floor.

     

    NATIVE PREFERENCE: The Mohawk Gaming Enterprise utilizes a Native American preference policy in hiring, training, and promotion. When there is a job opening or training opportunity, the Gaming Enterprise will evaluate all candidates for the position and will select the most qualified candidate. In the event two or more candidates meet all of the job requirements and have substantially similar qualifications, the Gaming Enterprise will utilize the preference policy to make the final determination on who will be offered the opportunity or position. When preference is utilized, first priority will be given to enrolled members of the Saint Regis Mohawk Tribe. Second priority will be given to members of other federally recognized Tribal Nations and/or First Nations citizens from Canada. All other individuals will be third priority.

     

    CERTIFICATES, LICENSES, REGISTRATIONS: Must obtain and maintain a St. Regis Tribal Gaming Work Permit which requires a criminal background check to be used solely for employment purposes. Successful candidates for employment must submit to and pass a drug test for illegal substances prior to employment being confirmed. In case of a positive result, the candidate is not eligible for employment with the Akwesasne Mohawk Casino Resort. Employment will not begin until process is completed.
