    POSITION SUMMARY:

    The Cook Lead provides technical and administrative assistance to the Sous Chef and to prepare and portion food for the resort’s food and beverage outlets.

    ESSENTIAL FUNCTIONS:

    + Possesses a solid background in making soups, stocks, grilling and roasts with the knowledge of varied methods and techniques to prepare food.

    + Possesses knife handling skills.

    + Assumes control of the kitchen in the absence of a Sous Chef.

    + Assists Sous Chef in developing additions to menu.

    + Assists in training and updating staff.

    + Manages product availability for restaurant and banquet items.

    + Directs proper sanitation of kitchen facilities and equipment.

    + Ensures that all kitchen equipment is in good working order.

    + Directs proper maintenance of kitchen coolers and freezers (food product rotation, sanitation, labeling, etc.)

    + Monitors and controls all food production.

    + Ensures safe working environment and techniques in the kitchen.

    + Models and promotes good working relationship with Front of the House managers and staff.

    + Other duties as assigned.

    EXPERIENCE/QUALIFICATIONS:

    + High school diploma/GED preferred.

    + At least one year of experience in food preparation.

    KNOWLEDGE, SKILLS, AND ABILITY

    + Experience in and passion for consumer service

    + Willingness to learn new skills and be a team player

    + Learn all menus and is able to communicate all food offerings

    + Clean and clear service areas

    + Follow proper procedures as disclosed in Standard Operating Procedures as explained to staff

    + Preparing food to quality standards and according to health department regulations

    PHYSICAL REQUIREMENTS:

    + Regular walking, standing, lifting up to 50lbs, etc.

    **INDEPENDENT JUDGEMENT** :

     

    Performs tasks and duties under general supervision, using established procedures and innovation. Chooses from limited alternatives to resolve problems. Occasional independent judgment is required to complete work assignments. Often makes recommendations to work procedures, policies, and practices.
