Description of Job
About the Nutrition Services department:
The Nutrition Services Department exists to provide quality food service and medical nutrition therapy to more than 1600 clients in a mental health care facility and the Colorado Department of Corrections (CDOC). With over 100 employees, the department strives, within available resources, to provide adequate nutrition to clients based on medical, spiritual, ethnic, cultural, and mental health needs.
Primary Duties:
Production Baking:
+ Creates quality baked goods by following standardized recipes in order to maintain quality standards and consistency of product; decorates desserts in an attractive manner.
+ Measures and combines ingredients using mixers, blenders, heat sources, and other equipment to make baked goods, such as cookies, bread, cakes, etc.
+ In the preparation of recipes visually, inspect for correct consistency, color, and texture.
+ During cooking, monitors and documents food temperatures following Hazard Analysis and Critical Control Point (HACCP) guidelines.
+ Counts and portions of food items based on census per location.
+ Assists in the production and maintenance of par stocks for bakeshop items with proper rotation of products while maintaining cleanliness and hygiene standards in the bakeshop.
+ Assures that standardized recipes, written instructions, portion sizes, production sheets, and food safety guidelines are followed and maintained.
+ Evaluates the appearance, taste and texture of bread and baked goods to ensure it is attractive and appetizing, and meets food safety standards.
+ Cleaning
+ Operates and cleans commercial food equipment, following manufacturer's guidelines and instructions for safe operation.
+ Cleans kitchen equipment, production areas, tables, hoods and dining room or North Kitchen areas.
+ Wash dishes, utensils, pots and pans by using the dishwasher or 3 compartment sink.
+ Records dish machine wash and rinse temperatures.
+ Pushes food carts to designated locations.
+ Safety and Sanitation
+ Follows policies and procedures regarding utensils counts, key monitoring, food auditing, operation, and minor servicing of equipment.
+ Applies proper sanitation techniques when cleaning production areas and equipment.
+ Documents knife counts, refrigeration temperatures and food temperatures on designated log sheets.
+ Ensures all refrigerators and other log sheets are updated daily.
+ Ensures IOJ and incident reports are completed in a timely manner.
+ Follows food safety guidelines in accordance with federal, state, and department standards.
+ Monitors and documents food temperatures, following HACCP guidelines.
+ Training- In-services
+ Maintains active computer access to complete Cornerstone training.
+ Regularly checks emails and responds within a timely manner.
+ Attends yearly competency fair and completes mandatory hospital and departmental training.
+ Other duties as assigned

Minimum Qualifications, Substitutions, Conditions of Employment & Appeal Rights
Minimum Qualifications:
+ Two (2) years of relevant experience in an occupation related to the work assigned to this position.
+ Acceptable forms of experience are in: Food Service/Hospitality and Bakery/ Commercial Cooking setting
**Employment history is calculated on a full-time basis (40/hrs per week). Part-time employment is calculated on a pro-rated basis to determine qualifications. Be sure your application specifically addresses your qualifications, experience, work products, and accomplishments as they relate to the position and minimum requirements.
Preferred Qualifications:
+ Previous experience in a high volume production kitchen
+ Experience operating commercial bakery equipment
Conditions of Employment:
+ A pre-employment full criminal background check will be conducted as part of the selection process as this position is deemed to have direct contact with vulnerable persons. Felony convictions, conviction of crimes of moral turpitude, or convictions of misdemeanors related to job duties may disqualify you from being considered for this position. Should your background check reveal any charges or convictions, it is your responsibility to provide the CDHS Background Unit with an official disposition of any charges.
+ Other: TB Testing; annual influenza and other vaccinations as required by the State of Colorado
+ Use, Handling, or Exposure to hazardous materials: Exposure to cleaning chemicals and commercial equipment
+ May be required to work weekends, evenings, and holidays.
+ Essential - Support Care Services Designation - Must be available for call back to perform essential and/or emergency services of the agency without delay or interruption
+ Former State employees who were disciplinarily terminated or resigned in lieu of termination must disclose the information on the application and provide an explanation why the prior termination or resignation should not disqualify the applicant from the current position. Absent extraordinary circumstances, prior disciplinary termination or resignation in lieu of termination will disqualify the applicant from future State employment with CDHS.
