POSITION PURPOSE
Prepares menu items including proteins, vegetables, and sauces. Properly labels, monitors and dispositions all foods according to Washington State Health Code and UW Dining policies and procedures and maintain records of foods produced and wasted. Develops and maintains positive relationships with customers in taking orders, plating, cooking, and serving. Reviews par levels to ensure proper stocking for the next day and submit orders.
DUTIES AND RESPONSIBILITIES
+ Lead and participate in cooking or baking menu items in compliance with franchise requirements.
+ Lead orientation and training of staff and students, including preparation, portioning and service.
+ Lead and participate in inventory management, storage and rotation of product.
+ Provide feedback to leadership on observations of employee performance.
+ Introduce new and seasonal menu items through testing and hands-on training.
+ Review recipes and consult with the unit manager to confirm production goals and service needs.
+ Work alongside, and direct staff and students in:o Accurate dough managemento Pizza tossing, portioning, topping, launching, proper oven rotation, and cutting.o Salad preparation and portioningo Proper slice oven routine and cleanlinesso Performance of quality control assessments, including Slice Quality Rating (SQR), Pie Quality Rating (PQR), Quality Service Cleanliness (QSC), Product and Food Safety Audits.o Adherence to customer service standards.
+ Direct Adherence to Health & Safety standardso Monitor and maintain food temperature logso Ensure compliance with time as a public health controlo Monitor and maintain logs including hot holding, cooling, HACCP and waste logso Ensure that food items in storage areas, including refrigerators are properly packaged and labeled.
+ At the end of the shift, disposition all food that has been on display or held in the kitchen according to Washington State Health Code and UW Dining policies and procedures, and document waste.
+ Ensure that all items in walk-in and in other storage areas are properly labeled per Pagliacci standards.
+ Review par levels and ensure the station is properly stocked for the next day, submitting orders through the CBord and franchise portals.
+ Make recommendations on adjustments to par stock levels based on anticipated volumes.
+ May perform additional data entry of daily production/waste records in CBord.
+ Monitor catering and pickup orders.
+ Perform related duties as requested. **POSITION DIMENSIONS**
+ The position is an 11.5-month cyclic position, with the annual leave period occurring from mid-December to early-January.
+ While staff are hired into specific positions, they may be reassigned to a different unit or schedule with two weeks of notice. **MINIMUM REQUIREMENTS**
+ Possession of, or eligible to obtain a Washington State Food Worker card within two weeks of employment.
+ One year of experience preparing and serving food and maintaining clean work area. **Equivalent education and/or experience may substitute for minimum qualifications except when there are legal requirements, such as a license, certification, and/or registration.** **DESIRED QUALIFICATIONS**
+ Experience with Microsoft Word and Excel.
+ Experience in a high volume pizza production setting. **CONDITIONS OF EMPLOYMENT**
+ A satisfactory outcome from the employment verification and reference check processes.
+ Pagliacci Core Cook Certification within 1 year of hire date.
+ Washington State Food Worker Card within two weeks of employment.
