The Rochester Presbyterian Home is looking for a caring professional to serve as a Sous Chef at our Homestead location on Thurston Rd, Rochester, NY.
Sign on bonus - $500.00
The Sous Chef produces top quality food items that are served fresh and within the guidelines of the recipes and cooking methods that are provided. The position will provide leadership and mentorship in and outside of the kitchen. Direct other staff members to produce top quality food items that are served fresh and within the guidelines of the recipes and cooking methods that are provided.

Job Description
+ Prioritize tasks and stay organized to ensure deadlines are met.
+ Understand measurements and conversions, read recipes and instructions, cook according to established procedures, and document all necessary items within the realm of the state and local Department of Health Codes.
+ Prioritize cooking based on time needs.
+ Prepare meals for elders in a memory care setting.
+ Understand the effects of aging and remain empathetic to the needs of elders.
+ At meal times, assist in delivering meals to the 3rd and 4th floor while ensuring meals are ready for the main dining room. preparations for the next day, assess ingredient needs.
+ Grill outdoors during events and on “Grill Days”.
+ Complete required prep sheets, production logs, temperature logs, etc.
+ Forecast to make sure all necessary products are secured for the week to avoid making substitutions on menus.
+ Organize meal preparations for easy access.
+ Direct staff in maintaining proper meal temperatures and in plating and serving meals.
+ Monitor staff completion of daily “Menu Planning Guide” book, refrigerator and freezer temperature logs, and dishwasher temperature logs.
+ Assist in checking in orders for accuracy on delivery days.
+ Communicate concerns and needs of the four cottages to the Executive Chef.
+ Maintain sanitization and cleanliness of workspaces and preventative cleaning of food preparation areas.
+ Audit for cleanliness, quality, and compliance and guiding staff on the standards.
+ Ensure that the MYS DOH guidelines are followed in food preparation, storage, and documentation.
+ Participate in group training sessions on food safety and sanitization.
+ Perform other duties as directed.

Work Environment
the employee will occasionally work near moving mechanical parts; fumes or airborne particles; toxic or caustic chemicals; outdoor weather conditions;
Requirements:
+ 5+ years of food service experience in a time and task-related field. Experience in long-term care, assisted living community or ALR homecare setting with older adults is a plus.
+ Understands the effects of aging and remains empathetic to the needs of elders.
+ ServeSafe certification.
+ 18+ years of age
+ Pass NYS Department of Health Criminal History Background check.
