    This position has overall responsibility for all aspects of the food service operation at the Minnesota Correctional Facility-Shakopee, including meal production, special diets, portioning/serving, procurement, budgeting, and supervision of staff and incarcerated individuals. This position ensures the facility food service operation meets or exceeds the standard of safety and sanitation as set by department policy, and the State Department of Health. This position also oversees a food service training program for incarcerated individuals.

     

    This position has direct contact with incarcerated individuals.

    Minimum Qualifications

    The following qualifications are required of all applicants seeking consideration for this position:

    REQUIRED CERTIFICATION:

    Current certificate in Food Safety (e.g. ServSafe Food Handler certificate or ServSafe Manager certificate; National Registry of Food Safety Professionals Food Handler certificate or Food Safety Manager certificate; Prometric Certified Professional Food Manager).

    AND

    Current Food Manager Certificate issued by the State of Minnesota, or ability to obtain this certificate within the probationary period.

    REQUIRED EXPERIENCE:

    Minimum of five years food preparation experience in a buffet restaurant, cafeteria, school, hospital or other large institution with at least two years of that time providing supervision or lead work to food service employees.

     

    Completion of a vocational school program (nine months or more) in commercial cooking, institutional dietary management or equivalent may be substituted for one year of the five-year food preparation experience requirement.

    Candidates who meet the above requirements will be further assessed on the following:

    + Knowledge of state and federal regulations related to food sanitation, food and occupational safety, and food operation licensing and food service certification requirements.

    + Knowledge of food service delivery techniques and principles of large-scale food purchasing, food preparation, and budget management.

    + Knowledge of human resources principles, procedures and systems sufficient to manage and maintain a harmonious labor relations environment in accordance with collective bargaining agreements and affirmative action/equal opportunity policies.

    + Written and oral communication skills sufficient to communicate effectively with managers, staff and incarcerated individuals.

    + Human relation and conflict resolution skills sufficient to effectively solve problems in a manner that is sensitive to organizational structures, cultures, as well as the needs of groups and individuals; provide effective supervision, training and constructive feedback to staff and incarcerated individual workers; and to elicit cooperation from staff and incarcerated individual workers.

    + Computer skills using email, word processing, and spreadsheet software (e.g. Microsoft Office or similar), as well as other internet and software applications, sufficient to send correspondence, develop and modify documents and reports, order food and materials through an online ordering system, and participate in menu development and menu substitutions using a menu software program.

    + Math skills sufficient to calculate food costs, food packaging yields, and other production numbers, as well as to plan and adjust an annual budget.

    + Ability to plan production for large-scale food service, uphold menus and special dietary requirements, determine appropriate menu substitutions, and direct quantity cooking with economy and retention of quality.

    Preferred Qualifications

    The following qualifications are strongly desired of applicants seeking consideration for this position:

    + Completion of a vocational school program (nine months or more) or higher in commercial cooking, institutional dietary management or related field.

    + Supervisory experience in a large-scale residential (100 residents or more) food service setting.

    + Knowledge of the safety and security considerations of food service delivery within a correctional environment.

    + Current Food Manager Certificate issued by the State of Minnesota.

    Physical Requirements

    The completion of pre-placement physical components may be required for this position. These components consist of a tuberculosis screening.     Additional Requirements

    The selection process may include screening the top candidate(s) on their criminal history, predatory offender registration, offender associations and/or other applicable background information in accordance with Department of Corrections’ policy. Top candidate(s) must pass a criminal history check which includes successful completion of all sentencing and/or restitution requirements of law enforcement jurisdictions, including probation.

     

    Employment history/reference checks, including incidents of sexual harassment, will also be conducted on the top candidate(s) in accordance with Department of Corrections’ policy. This may include a review of job performance and discipline records.

     

    New employees will be fingerprinted within the first 30 days of employment.
