    About the Division of Youth Services:

    The Division of Youth Services (DYS) provides a continuum of residential and non-residential services that encompass juvenile detention, assessment, commitment and parole. DYS is the agency statutorily mandated to provide for the care and supervision of youth committed by the District Court to the custody of the Colorado Department of Human Services. The Division operates ten secure facilities that serve youth between the ages of 10 and 21, who are pre-adjudicated, sentenced, or committed. For pre-adjudicated youth, the Division is also responsible for the management and oversight of Senate Bill 91-94; a State-funded, locally administered program that provides services to youth at risk of further progressing into the juvenile justice system. In addition to residential programming, the Division administers juvenile parole services throughout the State.

    Description of Job

    Job Assignment:

    The purpose of the work unit is to provide a statewide continuum of services and programs to access, treat, and control youth placed in its care for delinquent behavior.

     

    This position exists to manage the food services program in a juvenile correctional facility and to oversee the youth food service work program. The individual managing this program must supervise staff; provide quality meals to youth and staff; and to ensure compliance with regulations, policies, and standards.

     

    Shifts will be scheduled between 4:00 a.m. and 7:00 p.m. and are subject to change based on the needs of the program.

    Job Duties:

    INVENTORY MANAGEMENT. Inventory, forecast, requisition and acquire, inspect, reject, and store raw food and supplies for meal preparation. Sign requisitions and invoices and submit for payment. Completing inventory by the required date. Forecasting in advance accurately for facility counts. Changing forecasted numbers as necessary. Inspect inventory for quality assurance using Hazard analysis and critical control points (HACCP) standards. Signing requisitions and invoices after inspection and approval of product/s received. Submitting requisitions and invoices weekly into VISIONS as well as to the main office for payment. Maintain a log for meal item counts for the Choose 2 lunch, implementing these numbers into visions. Daily issuing of all inventory items into VISIONS.

     

    SUPERVISION. Direct food services staff to provide facility food services and comply with applicable laws, regulations, policies, and standards. Schedule staff; approve leave requests and time sheets. Conduct employee performance plans, reviews, and evaluations and maintain documentation to support evaluations. Issue corrective actions. Interview and hire food services staff. Provide orientation for new employees and other training required for food services staff. In the absence of the Correctional Support Trades Supervisor I’s provides supervision to youth. Work alongside staff to effectively set expectations for each shift. Conduct monthly staff meetings as well as monthly individual performance reviews as needed. Being involved with the Vocational work program, working with youth in the program regularly and as necessary. Training new employees the way we operate in food services as well as facility specific.

     

    SANITATION. Ensures that proper sanitation procedures are followed. Ensures that food services equipment and physical plant of kitchen are cleaned on a regular basis to keep them free of food particles, dust, bacteria. Controls times and temperatures of food to prevent food borne illness.

     

    MEAL PREPARATION. Prepares production worksheets. Ensures that menus and recipes are followed in order to comply with the National School Lunch Program, School Breakfast Program and DYS policies and procedures. When recipe changes are required, document changes and submits to central office. Assures that food is attractive, appetizing, and of proper temperatures. Ensure all meals are tracked on the daily meal rosters correctly. Following up on all paperwork for each day. Being present during meal service to ensure food looks good, also taste testing products.

     

    SAFETY AND SECURITY. Anticipates and recognizes potential and real safety and security hazards. Ensures that food service equipment is properly utilized. Enforces good safety practices to reduce slips, trips, falls, burns, etc. Ensures that knives and/or culinary utensils are inventoried according to facility procedures to prevent loss. Ensures that doors are kept locked to prevent escapes. Follows facility key procedures. Sees to it that chemicals are stored and used properly. Trains staff and youth on fire prevention and evacuation procedures. Ensure all staff members are trained to follow the key procedures, keeping doors secure while residents are in the area and ensuring doors are secure at all times. Ensuring all chemicals are labeled and the location of the SDS sheets are posted. Ensure all staff members attend Fire and Safety Training 8.1 and 8.3. Ensure that staff know evacuation codes, where to go and what to do during fire or emergency procedures.

     

    TRAINING AND MEETINGS. Attends DYS and facility meetings to maintain and increase knowledge regarding procedural changes. Attends training to increase job knowledge. Attends DYS and facility meetings to resolve issues and/or to plan program changes. Make sure all staff receive training when it is offered and or required.

     

    REGULATORY AND POLICY COMPLIANCE. Develops facility implementing procedures in order to comply with regulations and policies. Surveys youth and staff to evaluate acceptance of products served. Inspects kitchen to ensure that safety and cleanliness are maintained and that temperatures for food and equipment are adequate. Prepares daily, weekly, monthly, quarterly, and yearly reports, records, and forms for compliance with the National School Lunch Program, School Breakfast Program, Donated Foods Program, Rules and Regulations Governing Food Service Establishments, and DYS policies and procedures. Follow up on all documentation. Train staff members about utilizing donated USDA food items to help department costs.

     

    RESOURCE MANAGMENT. Reports equipment and building malfunctions to maintenance for repair. Being actively involved in day-to-day operations. Performing daily evaluations of perpetual inventory. Ordering strategically throughout the month. Know budget objectives and manage them throughout the month.

     

    OTHER DUTIES AS ASSIGNED. Performs other duties as assigned. My be required to work any shift, weekends, holidays, and OT to ensure adequate coverage to feed the clients.
