Description of Job
Shift Information:
8:00 am - 4:30 pm with possible varied shifts, weekends, and holidays based on facility needs
This position will manage all aspects of the Food Service Program, responsible for ensuring residents receive adequate nutrition, ensure sufficient staffing, manage scheduling, food production and food service following all state and federal guidelines.
Job Responsibilities:
Food Service Program Manager
+ Develops menus that meet the nutritional needs of residents in accordance with the recommended dietary allowances of the Food and Nutrition Board of the National Research Council, National Academy of Sciences and ensure they are developed, advanced, and followed.
+ Ensures food is prepared by methods that conserve nutritive value, flavor and appearance, and food that is palatable, attractive and served at the proper temperature.
+ Ensures that residents receive food designed to meet individual needs and preferences and are offered similar foods as substitutes when necessary.
+ Works closely with the Registered Dietician (RD) to develop therapeutic diets as prescribed by the primary care physician.
+ Ensures there is no more than 14 hours between meals, and that nourishing snacks are provided and available to residents at all times.
+ Ensures assistive devices are provided to residents as needed.
+ Develops or revises policies and procedures to meet established State and VA Regulations for food service in long term care facilities
MDS and Care Planning
+ Meets with residents and their families to identify food preferences, special diets and other individualized approaches to ensure residents are satisfied with their meal service.
+ Works in collaboration with the RD to assess the resident’s nutritional status and interventions.
+ Completes Multiple Data Sets (MDS)and develops individualized care plans with goals and approaches.
+ Attends weekly care plan conferences and meets with residents/families. In the absence of the RD, completes new resident assessments timely and thoroughly to include individual preferences, allergies, etc.
Supervision of Sanitation and Safety
+ Responsible for monitoring kitchen and dining room sanitation and safety in the main dining room and the Four Seasons Trail and Sports grill dining areas.
+ Assures that the daily and weekly cleaning schedules are completed.
+ Ensures temperature logs are accurately and consistently maintained for refrigeration and cooking temperatures.
+ Maintains accurate logs of records.
+ Accurately maintains diet cards.
+ Establishes and maintains policy and procedures for the Dining Services/ Kitchen operations.
Procurement of Supplies
+ Responsible for the procurement of equipment and supplies while maintaining fiscal responsibility.
+ Analyzes price and quality to ensure the best product.
+ Completes requisitions and orders supplies.
+ Inspect and ensure foods and supplies are stored correctly for meal preparation.
+ Utilizes State contracted vendors and provides input into the selection of vendors when possible
Education / Other Duties As Assigned
+ Attends and/or provides training and meetings for the department.
+ Maintains competency with current state and VA regulations and provides training to staff on the same.
+ Other duties as assigned
Minimum Qualifications, Substitutions, Conditions of Employment & Appeal Rights
Minimum Qualifications:
+ Must be a Certified Dietary Manager or able to obtain it certification within 1 year
+ Five (5) years of relevant experience in an occupation related to the work assigned to this position
OR
Education and Experience:
+ A combination of related education and/or relevant experience in an occupation related to the work assigned equal to five (5) years

Preferred Qualifications:
+ Experience in a long-term care setting
+ Experience developing and maintaining staff schedules
+ Experience supervising or serving as a Team Lead
+ Experience developing individualized approaches to meet nutritional needs and satisfaction of residents / clients / customers
+ Experience developing and managing a food and supply budget
+ Experience ordering supplies and rotating inventory
+ Knowledge of policies and regulations regarding food preparation, holding temperatures, etc.
+ Experience working with veterans and/or elderly populations
Conditions of Employment:
+ Full Background: CBI name check and fingerprint check, ICON Colorado court database, Medicare fraud database, Reference Checks, Professional License verification (licensure requirements), Drug Screen, CAPS (direct contact with adults – Mental Health Institutes, Regional Centers, Veterans Community Living Centers)
+ Must pass a TB test.
+ Must possess a current/Valid and unrestricted US Driver’s License
+ This position is considered "essential service" and you will be required to report without delay or interruption to provide essential or emergency services to ensure health, safety, and welfare.
+ Former State employees who were disciplinarily terminated or resigned in lieu of termination must disclose the information on the application and provide an explanation why the prior termination or resignation should not disqualify the applicant from the current position. Absent extraordinary circumstances, prior disciplinary termination or resignation in lieu of termination will disqualify the applicant from future State employment with CDHS.
