DESCRIPTION OF WORK
In this position, your responsibilities will encompass various aspects of food production, serving, and sanitation. You will prepare basic food and beverage items, which includes washing and cutting fruits and vegetables. Additionally, you will be tasked with receiving, organizing, and issuing menu components from coolers, freezers, and dry storage areas. Your role will also involve gathering and assembling both food and non-food items for special events, camps, picnics, bag lunches, and other food orders, as well as labeling and restocking prescribed nutritional supplements. Proficiency in using kitchen tools such as knives, can openers, grinders, scales, food slicers, and toasters will be essential. You will also manage access to the kitchen by opening and locking doors with keys, operating an elevator, and accurately counting, pre-porting, modifying, and labeling food items for tray assembly based on generated reports.
In the serving aspect of your role, you will utilize various tools like dishes, scales, spatulas, whisks, and tongs to portion food accurately. Prior to tray assembly, you will ensure that meal delivery carts are plugged in and operational. Your duties will include lifting trays onto a conveyor and placing the appropriate service wares on each tray while reading diet information as the trays move. You will portion specified food items according to individualized tray tags, cover exposed foods with fitting lids, and verify the accuracy of serving amounts and food consistency before the trays leave the department. If any errors are detected, you will correct them promptly and communicate relevant information regarding tray assembly to your colleagues. Additionally, you will restock food and non-food items along the tray line and load trays into food carts, ensuring that hot foods are placed on the heated side and cold foods on the refrigerated side.
Sanitation will be a critical component of your role, requiring you to clean and sanitize equipment and work areas effectively. This includes unloading soiled trays and dishes, pre-rinsing pots and pans, and operating dishwashers. You will also be responsible for cleaning floors, walls, and all storage and serving areas, while gathering supplies to maintain a safe and sanitary food serving environment. Your duties will involve using chemicals and detergents for cleaning, hand washing and sanitizing items, and managing waste by placing garbage into secured dumpsters and operating a trash compactor. Adhering to safety protocols will be essential, as will washing and sanitizing garbage cans and lids.
