    Job Summary: The sous chef will coordinate, plan, participate, and supervise the production, preparation and presentation of food for a high volume kitchen comparable with a larger restaurant chain establishments. Responsible for providing a safe, sanitary work environment, which conforms to all standards and regulations and achieves profitable, competitive quality products. The sous chef will participate in interviewing and scheduling, assist with training/development and problem resolution. Additionally performs special projects and other responsibilities as assigned.

     

    Minimum Education: High School Diploma or GED. Associates Degree from a post-secondary culinary arts training program or community college strongly preferred.

     

    Licensure, Registration and/or Certification: Valid Photo Id, Valid Oklahoma Food Handler's permit or Oklahoma Managers Food Handler's Certificate.

     

    Work Experience: 3-5 years related experience in a high volume kitchen with a large food establishment inclusive of 2-3 years supervisory related experience.

     

    Knowledge, Skills and Abilities: Must have an extensive knowledge of cooking methods, cooking equipment, banquets, catering and retail operations. Demonstrated ability to coordinate with demonstrated organizational and time management skills. Experience with and knowledge of all Microsoft Outlook applications. Effective interpersonal, written and oral communication skills. Ability to organize and prioritize work in an effective and efficient manner.

     

    Essential Functions and Responsibilities: Monitors quality of all food production daily. Identifies and employs solutions to problems that may arise in the daily operation of the area. Ensures proper handling of all food products and equipment is maintained, to ensure food safety, cleanliness, and kitchen standards are adhered to at all times. In the absence of the executive chef or manager, as directed, communicates effectively with management and performs related responsibilities. Assists the executive chef by participating in scheduling, evaluation and monitoring of staff daily according to policy and documents. Responsible for covering on a rotational schedule with rotational days off that may include weekends and holidays. Responsible for maintaining a high level of professionalism at all times while managing in a diverse environment, focusing on patient and customer services which are essential to the success of this role.

     

    Decision Making: The carrying out of non-routine procedures under constantly changing conditions, in conformance with general instructions from supervisor.

     

    Working Relationships: Has input on performance evaluations but does not prepare or give. Works with internal customers via telephone or face to face interaction. Works with external customers via telephone or face to face interaction. Works with other healthcare professionals and staff.
