Position Summary:
DESCRIPTION:
The Food and Beverage Administrative Controller is responsible for assisting the Food and Beverage Director and Outlet Managers in overseeing the financial operations and compliance within the food and beverage department. This role is crucial for ensuring that resources are used efficiently and that financial targets are met.
Primary Responsibilities:
RESPONSIBILITIES:
•Monitor and verify scheduled hours and overtime based on posted Outlet Manager schedules.
•Master, manage and utilize Inventory Control POS/Software to assist Outlet Managers in tracking all inventory.
•Build and maintain digital recipe catalog for every food and beverage item that is offered.
•Cost/Inventory Control – monitor and review all monthly inventory counts for accuracy.
•Develop accurate and working par levels for all Food and Beverage items in all outlets.
•Track waste logs for all outlets to ensure proper tracking and identify any anomalies.
•Assist Food and Beverage Director and Outlet Managers in creating annual budget for all Food and Beverage outlets.
•Assist and track Outlet Managers and Food and Beverage Director in purchasing all food, beverages and supplies.
•Assist Outlet Managers in all training materials, checklists, recipes and guides needed for all areas.
•Submit orders into Sage Intact as needed.
•Assist Outlet Managers with POS item and price change request forms. Finalize and present to Director for approval.
•Assist Outlet Managers in adding and or updating SICS.
•Working knowledge of all Food and Beverage SICS. Monitor and ensure all Food and Beverage outlets are compliant with regards to their SICS on file.
•Provide excellent hospitality experience and service to guests, internal and external, through active guest engagement and positive attitude.
•All employees must be flexible and assume other responsibilities and tasks as assigned by management and as management deems necessary; this means fulfilling all other job duties as assigned.
•Scheduling Monday through Friday. Will be required to work a weekend day if the first of the month falls on Saturday or Sunday.
•To remain in compliance with Casino Regulatory policies and procedures, employees are required to attend all necessary meetings and training facilitated by Management.
Skills & Qualifications:
MINIMUM REQUIRED QUALIFICATIONS
•High School Diploma or GED.
•5+ years of experience in the hospitality service industry.
•5+ year of experience in business management or supervisory roles.
•Knowledge of Point of Sale (POS) software.
•Ability to communicate effectively both oral and written.
•Ability to work independently or with a group.
•Proficient in both Microsoft Word and Excel.
•Strong attention to detail and accuracy with strong organizational skills.
•Basic math and reading skills.
•ServSafe certified or be able to be ServSafe certified within first (90) days of employment.
•Must pass background checks and other pre-employment screenings.
PREFERRED QUALIFICATIONS
•5+ years of experience or education in business management/supervisory or a combination of skills/education.
•5+ years of experience in Food and or Beverage casino settings.
PHYSICAL REQUIREMENTS
•Ability to stand and walk for extended periods of time – up to 90% of full shift.
•Ability to reach, bend, stoop, and lift to 40 pounds.
•Ability to adhere to high standards of personal hygiene and grooming habits.
