    Summary:

    The Food Service Operations Manager (FSOM) will assist in providing administrative oversight of the Department’s Food Service Operations, including implementation and monitoring of the Department's food preparation, service, and safety. This position will work in the agency’s Central Office and under the supervision of the Dietary Services Manager. Travel to IDOC’s facilities will be required, and the incumbent is expected to work some irregular work schedules.

    Responsibilities:

    + Establish procedures that ensure effectiveness, menu compliance, fiscal responsibility, and health, safety, and sanitation of the food service operation.

    + Using available technology, establish and implement training programs and procedures for food service staff and residents.

    + Provide daily guidance and support to food service operations staff to help ensure a successful operation.

    + Regularly monitor correctional facilities and community re-entry centers for compliance with food service directives.

    + Conduct formal audits of food service operations and report findings to facility and other leadership.

    + Assist with the design, build, implementation, maintenance, and troubleshooting of food service technologies.

    + Ensure the ordering of food and supplies in accordance with contract requirements and purchasing rules and policies.

    + Identify equipment needs and collaborate with Purchasing to write bid specifications for purchasing.

    + Develop and implement emergency feeding plans.

    + Perform related work and special projects as may be required.

     

    Minimum Qualifications: Your resume needs to clearly articulate how your skills, education and experience meet the qualifications below –

     

    + Some knowledge of principles of nutrition. This is typically gained by completion of at least 3 credits of college-level coursework or a certification program that covered the principles of nutrition; OR at least six months of full-time work experience applying those principles in an institutional food service setting.

    + Some knowledge of management practices. This is typically gained by completion of two three credit or equivalent upper division college-level course or approximately 40 hours or equivalent of management training that included all the essential elements of management (Planning, Organizing, Leading, and Controlling - describe each); OR the State/BSU sponsored Center for Management Development Supervision I-IV or IDOC Leadership 100 or equivalent; OR six months of experience performing all management elements described above.

    + Experience ensuring proper sanitation and safe food handling practices are followed in a food service operation. Typically gained by having at least 1 year of full-time work experience in a food service operation where proper sanitation and safe food handling practices were a primary job responsibility.

    + Experience preparing and serving large volumes of food in an institution or facility. Typically gained by at least one year of recent (within the last 5 years) experience preparing and serving large volumes of food in an institutional, correctional, military, school, hospital or nursing home facility, or comprehensive commercial food service operation, and ensuring proper sanitation and safe food handling practices.

    + Experience using a computer to generate reports. Typically gained by having at least 6 months of full-time work experience using computer systems to generate reports and monitor budgets.
