• Food Production and Training Manager

    ARAMARK (Plano, TX)


    Job Description

    Aramark is searching for Food Production Manager to oversee the day-to-day kitchen operations for food services. Reporting to the Food Service Director, the Food Production Manager plans, administers and directs all unit activities related to food production operations, complying with the standards established by Aramark Student Nutrition, regulatory agencies, and client. The Food Production Manager leads food production staff, establishes, and maintains effective working relationships with other departments to provide a unified food service experience for students, faculty, staff, visitors, and employees.

    Job Responsibilities

    + Manages food production for site and food service management contractor

    + Management of food cost, food safety and waste controls

    + Train and manage kitchen personnel and supervise/coordinate all related culinary activities

    + Records inventory and estimate food consumption and requisition or purchase food

    + Select and develop recipes as well as standardize production recipes to ensure consistent quality in partnership with the Registered Dietitian

    + Establish presentation technique and quality standards, and plan and price menus

    + Ensure proper equipment operation/maintenance and ensure proper safety and sanitation in kitchen

    + Manages the centralized food production kitchen

    Qualifications

    + Requires at least 2 years experience and 0-2 years in a management role

    + Bachelor's degree or equivalent experience.

    + SERV Safe certification or HACCP knowledge required.

    + Experience with production systems is preferred.
