We’re currently seeking a Corporate Director of Beverage to lead the beverage vision across our dynamic portfolio. This is not just a role, it’s a calling for someone with an exceptional palate, an entrepreneurial mindset, and a deep love for hospitality. You'll work alongside our chefs, sommeliers, mixologists, and operators to elevate every sip across the MINA brand.
About the role:
The Director of Beverage develops and drives the strategic plan for wine and spirits for the MINA organization. This position is responsible for increasing sales and profits of the beverage program for both owned and RMA locations ensuring they meet the company standards for quality, sales, costs, guest service and satisfaction, food safety and sanitation. In addition, the VP of Beverage supervises, coaches and develops the Bar Director and Wine Director and helps support a culture and programs that develop bar and wine knowledge in restaurant employees while encouraging employee retention and development.
ESSENTIAL JOB FUNCTIONS;
VISION AND STRATEGY
+ Great operations start with great culture. The Director of Beverage drives a culture of training, accountability, discipline, and respect
+ Develop and implement creative and targeted sales-building strategies for assigned company restaurants to ensure optimal sales and earnings
+ Create a detailed roadmap to build a beverage program that drives revenue and profits while enhancing the quality of the beverage program and experience at MINA restaurants
+ Recognize changes in the Beverage landscape and adjust the strategic plan accordingly
+ Update the strategy on a quarterly basis and keep broader leadership team peers up to date on key
changes/priorities
+ Lead the organization through the lens of an entrepreneur and business owner
OVERSIGHT OF BEVERAGE OPERATIONS
+ Create detailed operating budgets and forecasts for beverage programming. Track progress on a weekly, monthly & quarterly basis and provide regular updates to the broader leadership team
+ Lead and direct the Wine and Bar Directors to develop highly relevant wine and cocktail menus that build sales while balancing the economics required to achieve strong profitability
+ Build strong relationships with operations leaders to ensure alignment on standards and priorities.
+ Develop and track relevant KPI’s that directly tie to both financial success as well as overall customer satisfaction
+ Establish systems and processes to ensure consistency of quality and execution from location to location
+ Lead contract negotiations with key vendors and suppliers to ensure MINA receives the best terms/pricing, including the oversight of our third party beverage consulting and marketing firm
+ Lead cross-functional activities that utilize the Corporate Shared Service infrastructure, including: timely HR and Recruiting process and timely reporting and budgetary process working directly with Finance and Accounting
+ Evaluate and implement technology solutions that improve and simplify beverage systems, processes, training, and operations
GROWTH AND LEADERSHIP DEVELOPMENT
+ Lead a culture that supports beverage excellence and continued development of all levels of wine and bar teams, creates clear “career paths” for employees and encourages team members to strive to reach new career heights
+ Instill a culture of accountability and discipline while supporting continued training and development.
+ Coach and mentor property leaders and work with them to develop and grow a diverse, high performing wine and bar teams
+ With the Directors of Wine and Bar, and in conjunction with the Learning & Development team, develop and implement programs and materials to support wine and bar knowledge amongst all FOH staff
+ Champion and embrace the vision/strategy of Talent Exchange to assist in the optimization of the system to ensure succession planning and individual growth of the beverage teams

MARKETING
+ Partner with marketing to develop a strategic marketing plan that drives beverage revenue
+ Consistently evaluate the ROI on all marketing activities to ensure that company funds are being a) prioritized appropriately and b) are delivering measurable impact
NEW RESTAURANT OPENINGS
+ Lead the beverage team in assisting with specifications and ordering of opening supplies and equipment for beverage
+ Participate in development meetings and, with beverage team, manage beverage critical paths for new restaurant projects.
+ Lead the beverage team in the development of training plan for new restaurants; and the training and development of new beverage leaders and teams.
