The State of Connecticut (https://portal.ct.gov/) , Connecticut Technical Education and Career System (CTECS (https://www.cttech.org/) ) is currently recruiting for one (1) full-time Head Cook (https://www.jobapscloud.com/CT/specs/classspecdisplay.asp?ClassNumber=4310TC&R1=&R3=) positions at the Vinal Technical High School (https://vinal.cttech.org/) in Middletown, CT, and one (1) anticipated Head Cook (https://www.jobapscloud.com/CT/specs/classspecdisplay.asp?ClassNumber=4310TC&R1=&R3=) position at Eli (https://whitney.cttech.org/) Whitney Technical High School in Hamden, CT.
You will be asked to specify which locations you are interested in applying for when submitting your application.
These positions will serve as the working supervisor of a busy high school kitchen serving nearly 600 meals daily while following all USDA requirements pertaining to the National School Lunch and School Breakfast Programs.

+ This position will be working in a school cafeteria in a high school environment.

In your role as a Head Cook, you will have the opportunity to:
+ Plan kitchen workflow and determine priorities;
+ Schedule, assign, oversee and review work;
+ Establish and maintain kitchen procedures;
+ Provide staff training and assistance;
+ Conduct or assist in conducting performance evaluations;
+ Act as liaison with operating units, agencies, and outside officials regarding unit policies and procedures;
+ Inspect and requisition food and supplies

PURPOSE OF JOB CLASS (NATURE OF WORK)
This class is accountable for acting as a working supervisor for food service employees engaged in the preparation and cooking of food.
EXAMPLES OF DUTIES
+ Plans kitchen workflow and determines priorities;

+ Establishes and maintains kitchen procedures;
+ Provides staff training and assistance;
+ Conducts or assists in conducting performance evaluations;
+ Acts as liaison with operating units, agencies, and outside officials regarding unit policies and procedures;
+ Inspects and requisitions food and supplies;
+ Supervises the cleaning of kitchen and other food service areas and of equipment;
+ May make recommendations on policies or standards;
+ May prepare reports and correspondence;
+ May plan menus and be responsible for serving of meals;
+ Performs the full range of duties as outlined in the Cook specification;
+ Performs related duties as required.
KNOWLEDGE, SKILL AND ABILITY
+ Considerable knowledge of
+ and ability to apply cooking principles and techniques on a quantity basis;
+ institutional cooking methods;
+ Knowledge of health and safety requirements in food service;

MINIMUM QUALIFICATIONS - GENERAL EXPERIENCE
Three (3) years of experience in the preparation and cooking of food.
MINIMUM QUALIFICATIONS - SPECIAL EXPERIENCE
One (1) year of the General Experience must have been in the preparation of food on a quantity basis.
NOTE: For state employees this experience is interpreted at the level of a Cook.
PREFERRED QUALIFICATIONS
+ Experience in preparation and serving of complete daily meals in a large scale (500 meals per day) institutional or commercial setting;
+ Experience using institutional food service cooking equipment;
+ Experience following basic food safety and sanitation guidelines and procedures;
+ Experience using basic computer software systems including email.
+ ServSafe Certification or the ability to obtain within a 60 day period upon official hiring date.
PHYSICAL REQUIREMENTS
+ Incumbents in this class must have adequate physical strength, stamina, physical agility and visual and auditory acuity, and must maintain such physical fitness as to be able to perform the duties.
+ Incumbents must be free from communicable diseases.
+ A physical examination may be required.
WORKING CONDITIONS
Incumbents in this class may be required to lift moderate to heavy weights; may be exposed to risk of injury from equipment and utensils used in the kitchen and from patients/clients.
