Job Summary
As a **Facilities Supervisor** , you’ll play a key role in maintaining a safe, clean, and efficient commissary environment that supports multiple Wolfgang Puck Catering locations across the Dallas area. You’ll lead a small team of dishwashers and stewarding staff while assisting the Facilities Manager in day-to-day operations, ensuring the highest standards of sanitation, equipment care, and overall facility maintenance. The Executive Steward provides high-quality food and beverage related services, striving to create a team-oriented and safe work environment for staff and associates. This role encompasses leadership, comprehensive sanitation management, inventory control, and operational support for both on-site kitchen operations and off-site events.
Key Responsibilities:
Leadership & Staff Supervision
• Lead, schedule, and supervise stewarding staff for on-site kitchen operations.
• Manage and schedule stewarding staff, ensuring proper training and adherence to company standards.
• Train team members in cleaning, sanitation, and equipment handling.
• Train staff in food safety, sanitation, and proper packing/unpacking methods for catering events.
• Establish and maintain good employee relations through effective hiring, positive motivation, training, and development.
• Maintain discipline and teamwork across the stewarding department.
• Conduct regular performance evaluations and provide coaching for continuous improvement.
• Communicate effectively with peers, supervisor, and subordinates.
Sanitation & Compliance
• Ensure all kitchens, prep areas, and event sites are maintained to health and safety standards.
• Ensure all kitchen and event areas meet health, safety, and sanitation standards (HACCP, ServSafe).
• Enforce compliance with local health department regulations and company policies.
• Ensure compliance with health and safety codes and policies.
• Ensure compliance with all catering permits, licenses, and food safety guidelines.
• Ensure compliance with outlined safety procedures.
• Perform regular safety audits.
• Implement and monitor cleaning protocols for equipment, utensils, and workspaces.
• Oversee proper cleaning and sanitizing of equipment, utensils, and service ware.
• Oversee the stewards and help maintain dishes, pots, pans, trays, kitchen, work areas, equipment, and utensils in orderly and sanitary condition.
• Clean, maintain, and organize a hazard-free work area.
• Responsible for the disposal of refuse and maintenance of dock/dumpster area.
• Monitor trash, recyclable refuse levels, and schedule pick-ups as needed for the business level.
• Assist culinary staff in the cleaning of the kitchen.
Inventory & Equipment Management
• Maintain and track inventory of kitchen equipment, service ware, and cleaning supplies.
• Maintain accurate inventory of cleaning supplies, dishware, glassware, and kitchen equipment.
• Coordinate with the purchaser to ensure adequate stock levels.
• Monitor and minimize breakage, loss, and misuse of catering equipment.
• Oversee proper storage and handling of equipment to prevent damage and ensure readiness for events.
• Perform cleaning, movement, and storage of all china, glass, utensils, silver, and equipment.
• Perform regular cleaning and preventative maintenance of kitchen equipment.
• Conduct regular checks on dishwashing machines, storage racks, and catering equipment.
• Report repair and maintenance needs to management.
• Schedule vendors for the repair and maintenance of equipment as needed.
Event Support & Logistics
• Coordinate with culinary and banquet teams for event setups and breakdowns.
• Support chefs and service staff by ensuring availability of clean and sufficient china, flatware, glassware, and utensils for each event.
• Support setup and breakdown of stewarding equipment at catering venues.
• Oversee the return of equipment for off-site events.
• Work closely with the Operations Managers, Chefs, and General Managers to anticipate needs for large-scale functions.
• Perform regular cleanings of company vehicles and ensure they are prepped for events.
Safety & Operational Efficiency
• Implement and monitor safe handling of chemicals and cleaning supplies.
• Conduct regular safety training sessions for staff on chemical handling and equipment use.
• Ensure compliance with OSHA and local health department regulations.
• Use chemical cleaning solutions in a safe manner and in accordance with manufacturer’s instructions.
• Fill and maintain proper cleaning/chemical levels according to manufacturer’s recommendations.
• Track and control usage of cleaning chemicals and disposables.
• Develop and implement standard operating procedures (SOPs) for stewarding in both kitchen and off-site event settings.
• Create and maintain cleaning schedules to optimize workflow and minimize downtime.
• Develop and enforce cost-control measures for stewarding operations.
• Recommend cost-effective solutions for cleaning, storage, and logistics.
• Operate equipment in the prescribed manner, with an emphasis on safety.
• Take preventative measures to ensure safety (i.e., wet floor signs, etc.).
• Inform department head of inoperable or unsafe equipment or conditions.
Qualifications:
+ Minimum **1 year of experience** in facilities maintenance, support services, stewarding, or housekeeping.
+ **Hands-on experience** with stewarding operations and equipment management.
+ Strong understanding of **food handling safety** and sanitation practices.
+ Clear and professional communication skills; **Spanish bilingual preferred.**
+ Proficient in Microsoft Office (Word, Excel, Outlook) and comfortable with basic reporting and documentation.
